Breakfast - Toast with spread and marmalade and a black coffee. I had already had a cup of hot water and lemon in bed before we came down for breakfast.
I didn't have any lunch, I was out and about running errands, so as soon as I got back I had a big bowl of soup and my little peachy pudding. (3.5)
As soon as I saw a whole half of peach in amongst my peach slices the other day I imagined this little delicacy. And here is where my little pastry scraps from yesterdays pasty ended up. I rolled them out flat and left the pastry disc in the fridge overnight wrapped in clingfilm The all I did was to grease a section of my large muffin/small pie tray tuck the pastry in, put in a dessert spoonful of my orange marmalade and then popped the peach half on top, then the pastry ws gathered round and it was cooked in the top oven of the Aga for 15 minutes.
By the time I had eaten my bowl of soup my little dessert was just about cool enough to eat. It was absolutely delicious and something I will definitely be doing again. Alan was really impressed, I gave him a spoonful ... gosh I'm so generous ... and he loved it. So next time I will have to make two.

Are you losing weight on the challenge? it looks like you're not getting enough calories some days. Your peach dessert looks really good, great idea!
ReplyDeleteI'm actually eating much larger portions than I usually do, it would be nice to lose some weight but at the moment I'm exactly the same weight as I have been for the last couple of months. I did weigh myself when I started this, so I'll let you know if I do lose any by the end of the Challenge ... fingers crossed that I do 😉
