Eat the Stores - Follow on Meals

I'm still making full use of everything we have as this string of photos will show.

I love making follow on meals and multiple meals out of one set of ingredients so yesterday I set too and made us Vegetable Stew, Vegetable Soup and Vegetable Pasties.

I'll mostly let the photos tell the tale.

Peelings and trimmings in one pan with an additional onion, and chopped up vegetables in the other.

Stock added to both.

Brought to the boil and then left to simmer away until cooked, peas were added to the stew for a pop of colour and extra goodness.

A couple of ladles full of the stew for my lunch.

The peelings pan whizzed up and turned into a lovely pan of soup.

Using a slotted spoon I lifted out a dish of the vegetables from the other pan, then everything that was left was whizzed up with my stick blender into a pan full of soup.  This was then portioned out with some being in the fridge for lunch for us both tomorrow and the rest was put into the freezer.

 Soup

The drained vegetables once cold were wrapped in a sheet of ready made shortcrust pastry, and turned into pasties.

Oooh ... you know me I love things in pastry :-)

One served with Bisto gravy for tea.

And the other left to cool on the tray ready for the freezer.

The cupboards and fridge might be emptying but the freezer is gradually getting fuller and fuller, oh well it will all get eaten in the end.

  1. That's what a freezer is for and I always say that's one step closer to being eaten once it's cooked and frozen!
It's nice to have stuff one can have at the press of a few buttons, I think.

    1. Yes, it's much easier with some home-made ready meals safely stashed in the freezer isn't it :-)

  2. Thank you for the peelings idea which you shared some time ago.
I'm so thrilled by making soup out of peelings that used to be thrown away because we have nowhere to put a compost heap in our cliffside garden.
I'm also not too keen to encourage the large rodent population we have roundabouts.
Now I can use the peelings, have a clear conscience and bowlful of soup.

    1. My pleasure :-)

Knowing the goodness is directly under the skin makes it a no-brainer to make good use of peelings if you decide to peel vegetables doesn't it. I'm glad you're enjoying additional 'free' and tasty meals out of your peelings.

  3. You are off to a great start Sue! I tried to comment yesterday a couple of times, but my comment would just disappear when I hit publish. Happy birthday to Alan, the cake looked really good!

  4. 3 lovely meals from your veg Sue. I make a meat stew serve with Giant Yorkshire puddings add some mash potato inside and then some stew over. I keep some of the potatoes unmashed and make a meat and potato pie by adding pastry, mix alittle of the stew with some diced cooked potatoes for pasties which I serve with home made potayo wedges and baked beans. The pasties usually go into the freezer for a later date, I get 4 pasties and 2 pies and 4 servings of stew by bulking out with veg and onions with the meat(500g) xx

  5. Oh my, you put my double cooking to shame. I have been cooking big pots of whatever we are having for supper and then freezing the leftovers to be used in other meals.

Tomorrow I am pulling out a frozen Turkey Tetrazzini for our supper.

    God bless.
