Challenge Seven - The Leftovers Challenge - Day One



I wanted to do a Challenge that cost me no money, that made good use of all the leftovers from last weeks 'For the Price of a Coffee' Challenge and that helped to use up the food in the freezer and cupboard of the Van, important as the caravan park closes at the start of December.  So this one seemed obvious.


Breakfast - Weetabix and Almond Milk.
Served with a glass of orange juice, not pictured.

The first new items to be brought in were the last two Weetabix in the jar, and obviously to be able to eat them without spluttering on dry crumbs I had to open a carton of my long life Almond Milk.  I always buy the long life UHT version because as well as obviously keeping in the cupboard for much, much longer than the fresh stuff does in the fridge, it is usually almost half the price … and more importantly it tastes almost exactly the same!!



 After breakfast I set to using up a lot of the fresh food leftovers.


A tray of chopped butternut squash and one of the other veggies.


I almost forgot to use the last of my garlic, but once finely chopped they were shared out between both the trays.  Once the vegetables were nice and soft I tipped them into a saucepan and added two tins of tomatoes.  This was then left to bubble away for half an hour or so.  Once cooled I blitzed the lot with my stick blender.


Our tea was completed with a portion of the sauce, 261g of spaghetti, two spring onions and half a block of added Feta .

Absolutely delicious.


The remaining sauce was divided into single portions in four tubs and is now in the freezer.


Left in the Leftovers:

1/4 sheet Puff Pastry
4 stuffing patties
1/2 tin beans
orange juice
1 slice of lemon (freezer) 
1 carrot
9 onions
3/4 iceberg lettuce


3 spring onions

4 apples 



700g porridge oats
375g spaghetti
250g red lentils
800g brown rice
tub of gravy mix
1 tin tomatoes
1 tin chickpeas
1 tin mandarin orange segments
2/3 tin peaches
4 potatoes


Added to the Stash:

Almond Milk
1/2 block Feta
4 tubs tomato and vegetable sauce

Todays 'Up to Five Items' Were:

Weetabix
Almond Milk
Vegan Feta Style Cheese

A good day, only two meals because as is the way when I'm cooking I nibbled my way through the chopping and simply wasn't hungry at lunch time.

  2. Does the closure of the park mean you have to leave?

    1. Yes, I have to leave on the 8th December and can return on 28th February. It's the reason we don't have to pay council tax here on the park, it's classed as a holiday park rather than a residential park. Instead we pay a share of the site owners business rates, much cheaper.
