Crazy Days Challenge - Day 41 - Cooking the Books Challenge - MARLENE'S CHOICE

Page 8 - which wasn't a recipe page!!

So I decided to go to the 8th recipe in the book = Sweetcorn Frittatas



I was so sure I had a tin of sweetcorn, but after lots of rummaging, no there wasn't, perhaps it's at the Van with everything else that I keep thinking I have here!!

So ... there was only one thing for it 🤣



Yup ... I sorted through the bag of frozen mixed vegetables for all the sweetcorn.  I managed to find 75g of the little yellow jewels, so I made it up to the required 100g with peas.  I also didn't have a courgette, so I used a grated carrot.


They were really easy to make and cooked brilliantly.  I cooked three together in the pan and then put them on a tray in the oven to keep warm while I cooked the last two.


Gosh they were good, and were so filling. 

 I'll be making these again for sure and I'm pretty sure that any grated vegetables would  work and rather than using any cornflour next time I'll just use all gram flour which is healthier and more protein dense.

    1. Have you tried using your mouse wheel and holding down the Control key, it enlarges and shrinks things depending on which why you slide the wheel :-)

      But in case you can't, here it is in a nutshell:

      1 Courgette
      Salt
      100g Sweetcorn
      40g cornflour
      75g Gram/Chickpea Flour
      1/2 tsp baking powder
      3.5 TBS vegetable stock
      1 TBS tomato puree
      2 TBS chopped spring onion greens
      ground black pepper
      olive oil

      Grate the courgette, sprinkle with salt and then place in a sieve over a bowl to drain of some of the liquid.
      Mix together the 2 flours and baking soda in a bowl.

      Mix together the tomato puree, vegetable stock and chopped onions.
      Pour the liquids into the dry ingredients and stir to make a thick batter.
      Season with black pepper.

      Fry in dollops in the olive oil. Turning once carefully.

  2. Hi Sue, I haven't had sweetcorn fritters for ages I have a few tins floating about and some gram flour, so I will make some for my tea tomorrow.xx

    1. Yes, next time I make this I will keep it so much more simple. Just grated, drained veggies with a couple of spoonfuls of Gram flour and lots of seasoning. This recipe seemed to complicate a very basic thing.

  4. I also make sweetcorn fritters and courgette fritters, I think I got the recipee from Frugal Queen some years ago, they are delish,with sweet chilly sauce, although Mango chutney sounds good, I must try it. Helen S.

    1. I decided against making the Mango chutney as well, as we didn't have a mango or anything similar ... and Alan fancied beans :-)

  5. Oh dear, you will have the same thing with my choice, never thought of that, page 3 will probably not be a recipe, sorry about that ! by the way, I just love the word dollop :)
