Crazy Days Challenge - Day 47 - Cooking the Books Challenge - MARGIE'S CHOICE

Page 42 - Two Minute Toast, Two Ways

I decided to make the second way, which seemed the most sensible option as basically the first one might kill me, or at the very least make me seriously poorly ... I'm allergic to avocado!!


Well I definitely had the ingredients to this little recipe if you count my peanut butter instead of the specified Almond Butter as a 'right' ingredient.

Although my bread was on the thin side and not the sort of 'fancy toast' that this recipe should no doubt include.  I imagine it would be so much better on a couple of slices of crusty toasted sourdough, or a homemade loaf.

Anyway I cracked on and made it for breakfast.


I thought my small banana might be too small, but once mushed up and with the peanut butter added and then spread over my thin as thin could be toast it was actually a very generous amount.


It was tasty, and it definitely needed that little sprinkle of salt to bring out the flavours and also to take the edge off the sweetness.  Will I make it again ... in this format I don't think so.  I think I would rather just have slices of banana rather than it be all mushed up, it looks so much nicer and is a nicer texture to eat when sliced.

    1. It was tasty, it was just the texture I didn't like. Banana slices would be so much better, but if you don't try you don't know and that is what this Challenge has been all about, potentially making things I wouldn't have chosen for myself.

  2. So sorry to hear you are allergic to avocado - avocado toast with sliced tomato is one of my favourites.
    Bananas and PB is a standard breakfast for me - like you I'd just use the sliced banana, not sure why we would bother with mashing them. Bananas are actually on my list to buy when I'm next in a shop - used some frozen bits along with some frozen berries & mango slices to make a smoothy for breakfast today - it was delicious.

I'd always avoided avocados as I didn't like the look of them (loved the colour though), but a few years ago when I gave up meat I decided to try and get to like them as everyone was saying how healthy they were. Each time I ate them I felt ill and it got worse and worse until the last time I collapsed with serious stomach pains which lasted for 24 hours. I was warned by the doctor not to risk eating them again. I am also allergic to duck eggs and goose eggs with similar side effects. You should sometimes listen to what your body is telling you. Next time there is something I hate the look of I just won't eat it!!

  3. I'm thinking I would just stick with my usual peanut butter with banana slices rather than making mush.

  4. I think sliced bananas instead of the mashed up and mixed would be much more appealing.
