Challenge Seven - The Leftovers Challenge - Day Five



Breakfast - Peanut Butter on Toast

After yesterdays luscious foody shots, todays photos (when there are photos) seem positively boring.  That's not to say the food was.

It was just a simple food day, taking things easy and not over-thinking things too much.


Lunch - Coleslaw and Jacket Potato.

Unfortunately, I forgot to photograph our plates before I shared my food once again with my lovely hubby.  I grated the carrot, finely sliced the onion and after keeping back a couple of lettuce leaves I shredded all the rest of the Iceberg.  Mixing everything with a couple of tablespoons of mayonnaise and some salt and pepper, made a big bowl of nice simple and crunchy coleslaw.



Tea - Potato and Chickpea Curry with Brown Rice

Once again I forgot to photograph our meal before we got stuck in, so this photo is shamelessly stolen from yesterday's post.  It was even more delicious second time around.  I do find stews and curries mellow nicely after a night in the fridge.


Dessert - Mandarin Oranges and Ice-cream

Having a smaller portion of the curry this time, we had room for dessert.  As I don't eat any dairy (I'm dairy intolerant) this is my preferred ice-cream, luckily Alan loves it too, although at home he has a freezer full of Magnums … he thinks I don't know - but I do  😉

Left in the Leftovers:

orange juice
6 onions
2 leaves of iceberg lettuce
4 apples 
600g porridge oats

375g spaghetti
250g red lentils
600g brown rice
tub of gravy mix


Today's  Up to 5 Items:

Peanut Butter
Ice-cream
Mayonnaise


A much easier day of cooking and eating today.  And as you can see the leftovers from last weeks Challenge are going down nicely.

Challenge Seven - The Leftovers Challenge - Day Four



Breakfast for Two - Peaches and Porridge

There were enough peaches left to be able to share, and of course there are lots of porridge oats left as well.


The ingredients for lunch.


I saved a few of the chickpeas to add to our evening meal.


Dinner - Homemade Hummus and Crackers

Gosh this was so delicious … and so garlicky



Getting the ingredients laid out to make our tea.


I decided to rinse the leftover baked beans and add them to the curry too.


This is my largest pan, as you can see all those ingredients made a very generous amount of curry.


Tea - Potato and Chickpea Curry

Tea for both us looked like this one.


And there was still lots left over.

orange juice
1 carrot
7 onions
3/4 iceberg lettuce
4 apples 
600g porridge oats
375g spaghetti

250g red lentils
700g brown rice
tub of gravy mix
1 tin mandarin orange segments
1 potato

Tahini
Garlic Paste
Cumin
1/2 box Crackers

A very successful day, with lots of lovely food.  This using up the leftovers really gets me thinking, sometimes over-thinking, but it's good to get the old grey cells working again.

Challenge Seven - The Leftovers Challenge - Day Three


Breakfast - Porridge and 1/3 tin Peaches



Served with cup of hot lemon water.


Dinner - Beans on toast with one and a half stuffing patties.



 Very yummy … and SO filling!!


I was going to peel and cook just two of the remaining potatoes, but decided to peel three of them as I had a plan in mind for tomorrows tea. 


The ingredients for tea.

I had decided to make a pasty with my final little piece of ready rolled puff pastry.  An ideal time to use up lots of bits and bobs.


Once they were all finally chopped, I rolled the pastry out a bit bigger than this.  And set to assembling the pasty.  Ooh I do love a bit of pastry, and this one sheet of ready rolled pastry has done me for three meals.  😃  


I couldn't quite fit all of the stuffing patties into the pasty, so this one will be eaten with it instead.



Tea - Potato, stuffing, cheese and onion pasty with stuffing patty and gravy.

1 carrot
9 onions
3/4 iceberg lettuce
4 apples 

700g porridge oats

375g spaghetti
250g red lentils
800g brown rice
tub of gravy mix
1 tin tomatoes
1 tin chickpeas
1 tin mandarin orange segments
1/3 tin peaches
1 potato

Added to the Stash:

2 cooked potatoes

None used, all food eaten was from the leftovers of last weeks Challenge.
